ESP32 BLE connection issues

Hi
I'm trying to connect my ESP32 to a BLE fuel level sensor.
I've added the needed service UUID and characteristic UUID that were mentioned by the manufacturer.
But for some reason my ESP can only read the MAC address of the device but cannot read the service UUID or anything else.
I've been using the default clientBLE example and also tried some other things found on google.
Is it some issue with ESP connecting to other BLE devices?

Also one issue I found funny was when I connect my OnePlus7 which has BLE 5.0 it doesnt connect to the sensor.
But when I use a recent Oneplus 10 with BLE 5.2 it connects without any difficulty. I've tried other phones with BLE 5.0 and it's the same.
Does that have something to do with the ESP32 also which is why i'm unable to connect to the sensor?
