BLE mesh send/receive GPS data

I'm new to BLE mesh and ESP-IDF so please bear with me.

I've managed to have the generic on/off example work and I understand how it's structured. Now I want to move on to my project which is to create a mesh network, where each node sends out GPS data. The sink might not be in the range of all the nodes, so I wanted the relay feature to be enabled too. I'm able to retrieve the GPS data from the GPS module connected to the ESP32 but I"m not sure how to send out this information in the mesh network.
Does anyone have any recommendation on which ble mesh model (from the esp-idf examples) that I can use for this case?? and how to modify it?
