Wake to Work Latency Comparison BLE/BT/WiFi

Question: Which protocol is the fastest to wake, shake hands and do work? BLE, Bluetooth, or Wifi?

My planned project involves two radio linked ESP32 modules <2meters apart. One module has a knob, the other has a motor. When the user spins the knob, the motor instantly (<30ms) matches the knob's rotation angle.

Power: Knob module runs on a coin cel. Motor module uses a wall adaptor.

Usage model: User spins knob wildly for 20 seconds, a total of 20 times, evenly spaced over a 90 minute period, repeated daily.

Desired battery life is 2 months.

Assuming best practice designs, which protocol would best fit my project? Perhaps none -might an ISM, simplex radio setup be better??
