ESP32 hangs after a few days

Thank you for your in-depth feedback.

I will indeed consider all that you have proposed and will be back to you in several days. Testing will take me a few days. One issue I have is that my shop testing 'competes' with the data being fed to Adafruit's IO. I will have to create separate dashboards/feeds to prevent this conflict while still generating similar data parameters to try and isolate the memory issue that I believe I have.
