start project with a specific SDK version

If you want a stable release right now, use v2.1.1.

And where is the v2.1.1. as on git https://github.com/espressif/esp-idf/branches I see only release/v2.1 Is it the same?
Also when I download the master branch - where in all the files that I downloaded I could check what version I actually downloaded? (I mean from my local copies)
