Hey Thomas,
Did you ever get this working? I've definitely been curious about using all the ulp core simultaneously as well. I'd like to use it to read buttons and possibly get data from peripherals. When I looked into it, it seems like you can use i2c on the ulp core more easily, it may be slower but with the ulp core you're going to be slow anyway.
