I intend to control the module via Bluetooth and an Android app. Is there a way to avoid Android Snooping / logging or any Bluetooth intercepting apps or mechanisms?

I don't think there is a chance of snooping. Because, if you control your ESP32 with Blynk app, you'll get a token. Without that token, nobody can link your android device with your ESP32.
