BLE_gatt_server parsing data and sending custom response

Hello. I have been learning about esp-idf and bluetooth. I have read this example explanation:
https://github.com/espressif/esp-idf/bl ... through.md

All I want to do for my application is to configure BLE to have 2 characteristics:
1 Read,notify
2. Write

I want my BLE to act like a UART. On write characteristic I just want to send some HEX value
And I want to get a response from the read charasteristic.

I have picked up GATT server example from esp-idf examples and simplified by deleting an additional service since the example contains 2 services and I only need 1.


All I am trying to figure out now, where do I include my function for parsing the write event. When I write something on my LightBlue app, I want to read this data, parse it and provide a response to the device.

Pseudo code:
(I am not sure what type of data should be written data. I write data on my phone in hex format

My full code is here ( I have put the GATT_server example code inside my custom BLE_custom.c and BLE_custom.h because I do not want to have everything in main.c All I have done is split it in source and header files but the rest is the same as example code)
