Duplicate behaviour of BLE device with ESP32

Hi!

I have a GPS/GPRS device that allows you to get position and send SMS. I was wondering what would be the first step to replicate it so I can use the manufacturer app for my fake "ESP32" one and theirs?

Basically how do I set device id and manufacturer? Can I do all that via Arduino? I cannot see a full example with all fields
