opposite to gpio_pad_select_gpio ?

Is there a "deselect" function for gpio_pad_select_gpio so say that the PIN is no longer used as a GPIO ?

For what reason? You could try gpio_set_direction(GPIO_NUM, GPIO_MODE_DISABLED)
