Libraries / Services for gathering diagnostic logs

Hello! I'm working on an IoT device to turn on my city parking in a few predefined locations.
Tech: ESP32-S3, GPS, NB-LTE, battery powered. I have one device that more or less works, but I want to build a few more and give them away to a few selected friends who will help with further testing & provide feedback.
As part of that phase, I want to collect a bunch of logs / diagnostic info about the device's state, such as how long it took to connect to the internet and GPS, signal strength, battery charge, and other things like that.
However, I need some log sink for this data to be gathered and analysed. I thought about using Google Analytics (I'm using Firebase anyway), but maybe there are some better ways / patterns / services I'm unaware of. Even if it is just to make snapshotting the device status easier. I feel like I'm reinventing the wheel here...

Any thoughts on how to approach it in a smarter way?
