VSCode, ESP-IDF & CMAKE Build to copy and rename firmware

Hi Guys,

My development environment is Windows 10 using VSCode.
I have the ESP-IDF extension installed and all is building correctly.
Within my CMakeList I create a version number and save this to version.txt which the build process picks up and uses.

What I would like to do is at the completion of the build process, to copy the firmware.bin file to a folder and adjust the name to "firmware_<version>.bin

Is this something that's possible?
If so, how would I go about it.
