What is the rated erase cycle for the embedded flash of the ESP32-U4WDH? 100K, 10k, less, more? I can't seem to find this info anywhere.

That's a good point, I'll bring it up with the documentation team. I think it's a safe assumption that the flash supports at least 10K erase cycles, but I'll need to get back on you for official/exact numbers.

It's been a year. Is the maximum safe number of flash erase cycles for the ESP32-U4W known yet, or is the hardware team still thinking about it?

I have it in my internal chat history that internal flash is specified to 100,000 cycles, so you can assume that. I'll add a note that we need to verify that number and put it in the datasheet.
