The table in that section lists the ESP32-S3 pins and the corresponding USB signal pins.
The table indicates that there is a 5V pin on the ESP32-S3 that corresponds to the V_BUS USB signal.
I found no 5V pin listed in the ESP32-S3 pin layout in the datasheet.
What is the correct pin mapping?

There indeed is no such pin. You're supposed to either not connect that wire (if you feed your ESP32S3 externally) or use it to generate the 3.3V to power your board.
