My company has interest to enter in the world of Matter, but we don't understand the differences (apart from the flash memory) between the ESP32-C3-wroom and the ESP8685-wroom, and in general between the ESP32-XX series and the relative ESP-8XXX series of products. Can anyone help us to better understand?
In any case, both ESP32-C3-wroom and ESP8685-wroom are compatible with Matter?

ESP8685 chips have flash inside the chip package and smaller number of pins exposed so the chip package and the modules are smaller compared to ESP32-C3 modules. There are couple of ESP8685-WROOM module variants and for exact details and comparison I would suggest checking the Product Selector.

ESP32-C3-wroom has 15 GPIO pins and 4MB flash. ESP8685-WROOM-06 has two variants. It can be 15 or 5 GPIOs. The flash can be either 2 or 4 MB. ESP32-C3-wroom can have onboard PCB antenna or external antenna connector. ESP8685-WROOM-06 has Onboard PCB antenna or external antenna connector.
