ESP-IDF Clean (Re)Install in VS Code

Hi -
The ESP-IDF extension in my VS Code got corrupted. Every single command results in 'not found' (see example)
I tried reinstalling the extension (also delete from file system), as well as removing the entire ESP-IDF installation on the PC incl. .espressif directories, etc. The status remains the same and I am unable to use the tool.
Does anyone know how to decisively remove all traces of ESP-IDF so I can do a clean install from scratch - or alternatively, just how to fix this
