Which one of these modules between ESP32, STM32W, or ublox(WiFiNINA) is better for wireless networks on a commercial scale?

You need to take into consideration the following:
1. Do you need an external antenna?
2. How much technical support will you require?
3. Cost per module.
The ublox NINA-W10 implements the ESP32 for its wifi, and implements an AT-Command style firmware which you can evaluate with the "Ublox Connectivity Software". The ESP32 modules from espressif also have an AT-Command style firmware, so they are probably quite similar.
Both ESP32 and UBlox have certification for their modules in various countries/regions.
The UBlox module has certification for an external antenna, the ESP32 modules do not have this, but you could do this yourself if you have time and money.
And finally, UBlox modules will be much more expensive, even in bulk quantities.
I can't comment on the STM parts/modules as I have no experience with them.

Regarding your specific question, which one is better on a commercial scale. If this is a serious commercial project/product that you are planning to develop/release then I suggest you look at the documentation from the various vendors you are considering, and then buy devkits for the ones you think are most suitable - get a basic prototype running on each and evaluate its performance.
This process takes time but will give you a strong indication on which platform is best for your use case.
Have you undertaken/completed an RF-based project before? There are lots of additional considerations with radio-conformance testing that you must be aware of.
