understanding examples/spi_master user callback

Hi,

so I played around a little bit with the code. But there is one thing I just don't understand.
Here is the send_lines code I use now:

so as you can see, I removed the Commands and some of the data and just kept the pixel data. So I had to change the display_pretty_colors function as well and provide the commands. This is the code snippet:

Now this changes still work, I can see the ESP32 Image on my Screen. So everything is fine. What bugs me is this:
For whatever reason, I cannot remove the user callback. In fact it seems like I can't even change it.
This is the code that is in the examples:

because I use the send_lines function with data only, I thought weill, just change it to this:

I tried to remove the callback completely and set the PIN_NUM_DC level accordingly in the display_pretty_colors function like this:

so what is the thing with the callback?
Of course I also tried setting the PIN_NUM_DC to 0 just in case, but I checked twice for data, this pin must be set to 1.

How are things like lcd_cmd(spi, lcd_init_cmds[cmd].cmd, false); or lcd_cmd(spi, 0x2A, 0) supposed to work when you completely cut off the ability to send commands to the display?
