Newbie needing help please with setting up a esp32 and data logging

Hi hope everyone is well, I'm new here and after some help please.

I'm also completely new to using esp32 development boards. I would like to setup a little data logging system using a SDI-12 sensor and a HDC1080 temperature/humidity sensor, the board I'm using is a wemos D1 R32

For the past few days I've been searching around the internet and trying to get the sensor and wifi to work on the same sketch (if this is possible) I've managed to set a sketch up using Arduino with the HDC1080 and I can see the data coming in in serial monitor.

I have also set up sketch up for my WiFi and I can see it connects in serial monitor.

I would like to see this data on grafana, I've tried for many hours now to get the data to show on the grafana dashboard by using Loki and graphite but I can't get a sketch to work with the WiFi and HDC 1080 sensor together, if that is even possible?
