Conversion Therapy needed

Hello, I am updating some of my projects to use the ESEP32 in lieu of the Particle P0 and I am having a difficult time with the coding. Moving from the Particle IDE is part of the problem, the arduino IDE is.....Arduino, which I have never used. When i was programming AVRs, I used ATMEL studio exclusively. Right now I am trying to get a simple MQTT code to execute, but i am having trouble with basic syntax that doesn't seem to work. I would prefer not to post all of my code here, but simple things like serial.printlnf() or strcopy, or even snprintf() dont seem to work here.

FWIW, I am using teh PubSubClient for my MQTT integration since its the closest one to my ARM based library. I think the ARM one might have actually been branched from PubSubClient.
